Minestrone with speck

Ingredients:

  • 100 g SEITZ pasta specle
  • 2 onions
  • 1 clove of garlic
  • 1 carrot
  • 200 g green beans
  • 2 celery
  • 250-300 g tomatoes
  • oregano
  • 2 tbsp olive oil
  • 100 g bacon cubes
  • 1 tbsp tomato paste
  • pinch of sugar
  • 1000 ml clear vegetable stock
  • salt, pepper
  • parmesan cheese slices

Procedure:

  1. Peel the onion, garlic, carrots and beans and cut into small cubes.
  2. Clean the celery and cut into thin crescents. Wash the tomatoes and cut into pieces.
  3. Heat the oil in a pan and fry the bacon cubes. Add the onion and garlic, fry for 2 minutes. Stir in the tomato paste and sugar and fry briefly.
  4. Pour in the stock and bring to the boil. Add the beans and cook for 1 minute. Add the celery, carrots, tomatoes and oregano. Cover and cook over low heat for about 10 minutes.
  5. Meanwhile, cook the noodles with plenty of boiling salted water.
  6. Season the minestrone with salt and pepper. Serve in a deep plate, sprinkle with parmesan cheese and serve.
