Minestrone with speck

Ingredients:
- 100 g SEITZ pasta specle
- 2 onions
- 1 clove of garlic
- 1 carrot
- 200 g green beans
- 2 celery
- 250-300 g tomatoes
- oregano
- 2 tbsp olive oil
- 100 g bacon cubes
- 1 tbsp tomato paste
- pinch of sugar
- 1000 ml clear vegetable stock
- salt, pepper
- parmesan cheese slices
Procedure:
- Peel the onion, garlic, carrots and beans and cut into small cubes.
- Clean the celery and cut into thin crescents. Wash the tomatoes and cut into pieces.
- Heat the oil in a pan and fry the bacon cubes. Add the onion and garlic, fry for 2 minutes. Stir in the tomato paste and sugar and fry briefly.
- Pour in the stock and bring to the boil. Add the beans and cook for 1 minute. Add the celery, carrots, tomatoes and oregano. Cover and cook over low heat for about 10 minutes.
- Meanwhile, cook the noodles with plenty of boiling salted water.
- Season the minestrone with salt and pepper. Serve in a deep plate, sprinkle with parmesan cheese and serve.
