Mediterranean pasta salad

Ingredients:

  • 300 g SEITZ Pasta RIGATONI, gluten-free
  • 1 onion
  • 2 cloves of garlic
  • 3 tbsp olive oil
  • 250 g cherry tomatoes
  • 200 g feta cheese
  • 50 g rocket
  • 150 g olives, sprinkled
  • 4 tablespoons white balsamic vinegar
  • 3-4 tablespoons tomato paste
  • mustard
  • salt, pepper
  • sugar
  • rosemary, thyme and oregano

Procedure:

  1. Cook the noodles in salted water according to the instructions.
  2. Peel the onion and garlic, cut into fine cubes and fry with 1 tablespoon of oil in a pan.
  3. Wash the tomatoes and cut them in half or in quarters depending on their size. Cut the feta cheese into cubes, wash the rocket and slice the olives.
  4. For the marinade, mix with the vinegar, remaining oil, tomato paste, mustard, salt, pepper and sugar. Add the sautéed onion and garlic. Season the marinade with the remaining spices.
  5. Mix everything together and serve.
