Baked gluten-free rigatoni with meat

Ingredients (4 servings):

  • 400 g gluten-free Rigatoni SEITZ
  • 1 small onion
  • 1 garlic clove
  • 100 g baked ham
  • 250 g minced meat, mixed
  • oil for frying
  • 3 tablespoons tomato puree
  • 1 shot of red wine
  • 200 ml vegetable stock
  • 200 ml cream
  • 2 teaspoons Italian herbs, chopped
  • 100 g peas
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper
  • 200 g grated cheese
  • Chopped herbs for sprinkling

Procedure:

  1. Peel the onion and garlic and chop finely. Cut the ham into cubes. Fry the minced meat in a little hot oil until it starts to crumble. Shortly before the end of the roasting add the onion and ham.
  2. Add the garlic and tomato paste and fry briefly. Pour first the red wine and then the vegetable stock. Pour in the cream, add the Italian herbs and boil the sauce for 10 minutes.
  3. Meanwhile, preheat the oven to 200 °C on the top/bottom heat.
  4. Cook the pasta according to the instructions on the packaging in plenty of salted boiling water. Drain and rinse thoroughly in cold water to prevent further cooking.
  5. Mix the pasta with the sauce, peas and Parmesan cheese and place in a baking dish. Sprinkle with grated cheese and bake in the oven for about 25 minutes, until the cheese is golden.
  6. Serve sprinkled with chopped herbs.
