Tomato soup with gluten-free letters

Ingredients (4 servings):

  • 125 g gluten-free letters SEITZ
  • 400 g peeled sliced tomatoes
  • 500 ml vegetable broth
  • 1 onion
  • 2 cloves of garlic
  • Olive oil for frying
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper
  • 4 tablespoons whipped cream
  • Fresh basil leaves for garnish

Procedure:

  1. Peel the onion and garlic, chop finely and fry in a little hot olive oil.
  2. Pour over the tomatoes and stock, add the thyme and bay leaves and cook, covered, over a low heat for about 30 minutes.
  3. In the meantime, cook the pasta according to the instructions on the packaging in plenty of boiling salted water. Keep some of the pasta water when straining.
  4. Finely blend the soup. If the soup is too creamy, thin it with a little pasta water.
  5. Season the soup with salt and pepper. Add the pasta and serve the soup topped with a little cream and sprinkled with basil leaves. Have a good taste!
