Tomato soup with gluten-free letters

Ingredients (4 servings):
- 125 g gluten-free letters SEITZ
- 400 g peeled sliced tomatoes
- 500 ml vegetable broth
- 1 onion
- 2 cloves of garlic
- Olive oil for frying
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper
- 4 tablespoons whipped cream
- Fresh basil leaves for garnish
Procedure:
- Peel the onion and garlic, chop finely and fry in a little hot olive oil.
- Pour over the tomatoes and stock, add the thyme and bay leaves and cook, covered, over a low heat for about 30 minutes.
- In the meantime, cook the pasta according to the instructions on the packaging in plenty of boiling salted water. Keep some of the pasta water when straining.
- Finely blend the soup. If the soup is too creamy, thin it with a little pasta water.
- Season the soup with salt and pepper. Add the pasta and serve the soup topped with a little cream and sprinkled with basil leaves. Have a good taste!
