Ingredients:
Sauce:
- 1 onion
- 1 carrot
- 1 onion
- 1 celery
- juice of ½ orange
- 425 g tomatoes
- 2 teaspoons of spices (oregano, rosemary, thyme)
- 1-2 tsp maple syrup
- salt and pepper
Preparation:
- Peel the carrots and onions, wash and clean the celery. Cut into small cubes. Chop the tomatoes finely. Squeeze the juice from half an orange.
- Chop the onion and heat the olive oil in a pan. Fry the onions until golden. Then lower the heat and add the tomatoes, the vegetable cubes and bring the mixture to the boil. Cook until the tomatoes are soft and a thick sauce has formed.
- Finally, add the orange juice and herbs. Allow the sauce to simmer for about 10 minutes on low heat.
- Meanwhile, cook the noodles in salted water.
- Season the sauce with maple syrup, salt and pepper to taste and serve with the noodles.
